2022 Cabernet Appassimento

Tasting Notes: 

The 2022 Appassimento, is like a concentrated time capsule of a stellar and rare vintage. The quality of Cabernet Franc and Cabernet Sauvignon in 2022 was exceptional. Unfortunately, our total yield of grapes was down by almost 50% due to some winter damage. The circumstances make this year’s edition a very limited one.

Rich, ripe and full-bodied best describes the Appassimento made of 50% Cabernet Franc and 50% Cabernet Sauvignon. The grapes were dried for 8 weeks and the wine was fermented in French barrels and aged for 32 months in 20% new French oak, which brings extra depth and extra layers, as well as more aging potential. On the nose, you experience the best of both Cabernet worlds: Dried black cherry, dates, prunes, figs and a beautiful cigar box with dried tobacco notes.

The velvety but very structured palate shines with those dried cheery notes and introduces concentrated pomegranate. Velvet like tannins hint at the long-term aging potential. This unfiltered wine will settle down (oak and tannins) over the next two years and will evolve gracefully for another decade. 

Aging potential: enjoy decanted for an hour now or age up to 2035+

Food Pairing: Rich Cheese Fondue. Pieces of dark chocolate, chocolate covered cherries. On its own by a fire(place).
