2023 Wild Ferment Riesling

Tasting Notes: This 2023 Wild Ferment Riesling represents consistency within its style; the use of “wild” indigenous yeast makes it very aromatic and expressive in its identity.

This wine displays a diversity of tropical and stone fruit notes such as pineapple, peaches, and the essential green apple. The palate reflects crisp acidity and minerality, with flavours of sour candy pineapple, cantaloupe, and hints of jasmine tea. It gives a dry, chalky finish with a refreshing beeswax mouthfeel. 

Food Pairings: This wine creates an excellent pairing for calamari risotto.
